Storing and Enjoying Your Waving Cat Kimchi

Our kimchi pots are crafted with care, using natural fermentation methods to create bold, flavourful ferments. While our products are safe to store at ambient temperatures for extended periods, pressure can build under the lid as the fermentation process continues. If this happens, the pots may start to leak or overflow. Don't worry — this is perfectly normal! It’s just the CO2 produced by the live probiotics escaping, and it doesn’t affect the safety or flavour of the kimchi.

To slow down fermentation and keep the kimchi fresh, we recommend storing your pots in the fridge once they arrive. This doesn’t stop fermentation entirely but helps stabilise the process. If you notice any overflow or the lid gently pops when opening, that’s a good sign! It means your kimchi is actively fermenting and full of healthy bacteria.

A Few Tips:

Refrigeration: Once opened, store your kimchi in the fridge to tame the fizz and preserve its best taste. If you leave it outside the fridge for too long, it may become over-fermented and lose flavour.

Pressure Build-up: The buildup of pressure can cause the lid to bulge slightly, which is completely normal for live, fermented foods. To prevent excessive pressure, “burp” your kimchi by loosening the lid occasionally.

Best Before Dates: We provide conservative 'Best Before' dates, but our kimchi can last many months after this. We recommend enjoying it within 5–6 months of opening, but it will remain safe and flavourful for longer if stored properly.

Our kimchi is naturally preserved with a low pH and healthy bacteria that outcompete any harmful microbes. If you see any veg above the brine level, simply press it down to ensure it’s submerged and stays fresh.
